Good vegetarian party food?
I’m having a party in a week, and I need some vegetarian food that will not only look pretty but also taste very good! (Most of my friends are omnivores, and they think all we eat is tofu. I so need to prove them WRONG! Cuz personally, I rarely eat tofu, but that’s not cause it’s not good, I just don’t like cooking it, lol)
SO! Appetizers preferably, but some small entrees and snacks, too! (Finger food is great!)
ANYWAY, if it could be under an hour prep time that would be great, I’ll have to cook all this myself.

Dips and crudites: hommus, eggplant dip, beetroot dip, olive tapenade and heaps of chopped carrots, celery, peppers, bread, crackers. Vine leaves, olives, semi-dried tomatoes, stuffed mushrooms. Corn chips & salsa & guacamole. Pita bread cut into small triangles with oil and garlic and grilled till crisp. Bowls of grapes and fruit. Dried apricots or strawberries dipped into melted dark chocolate. If you’ve got time: vegie sausages wrapped in filo pastry, chopped into 2 inch pieces and baked, served with ketchup = mini sausage rolls. Mini muffins made in advance. Fairy bread (bread & margarine with hundreds and thousands).

u can prepare vegetarian canopies.
take saltish biscuits, and spread on then potato and mayonaise sauce, stick a paper umbrella for good presentation.
another paste that can be spread on them are peas, carrots in tomato sauce, with a bit of coriander or mint to add colour.

Why types of foods do you want? I am an omnivore, but I have several friends that are vegetarian so I find myself often having to offer something vegetarian that will satisfy the meat eaters too.
On of my favorite things for a hearty dish is lentils. Food.com has a great meatless taco filling recipe that I have served often. The only change I make is I use 1/2 vegetable broth powder and 1/2 beefless broth powder (Frontier Natural foods vegetarian substitute for beef broth)

Vegetarian Indian food is also tends to go over pretty well if they like spicy.
Do a veggie tray, but have other dips included besides just the typical ranch. How about some taboule or hummus?
Make up (or purchase and reheat) some veggie pizzas in different styles- a Mediterranean one, a normal vegetarian one, a Margherita, for example.
You can buy ready-made taboule, hummus, and stuffed vegetarian grape leaves at your local grocery store if you don’t feel like making your own. If so, I recommend Joseph’s brand, if you have it available. Another popular brand is Cedar’s, for those products.
Get some sweet potato chips as well- they are really good plain or with dip. And they’re a nice alternative for regular potato chips.
You can do nachos with cheese, beans, tomatoes, sour cream and guacamole. Everyone loves those. Anything with filo dough is always a hit too. Like rolling it with a filling like cream cheese and apples and cinnamon and sugar or Swiss cheese and sauteed mushrooms. You can use 1/2 bell peppers and fill them with rice, tomatoes, Mexican spices, cheese, and other veggies. You can make pasta salads or potato salad.
